On the palate, it has huge volume combining in astonishing manner great structure with wonderful smoothness. Layers and layers of aromas and flavours which linger in the mouth, caressing it before developing into a finish that stays in the mouth and returns to the nose. It is advisable to decant the wine several hours before serving, especially the younger vintages.

Deeply coloured, medium bodied blend of Cabernet Sauvignon and Merlot, matured in French oak barrels for fourteen months. The Mill Race at Vergelegen was constructed during the tenure of Governor Adriaan van der Stel 1700 – 1708 to divert water from the Lourens river to the mill wheel. During archaeological excavations the granite base and sides were uncovered, adding further to the growing knowledge of the history and tradition of Vergelegen.

A wet winter followed by a cool moist spring resulted in vigorous healthy vine canopies which remained stress free during a mild but dry Summer. Moderate, dry weather with cool nights resulted produced healthy grapes with excellent intensity of varietal flavours. The resulting wines show great richness and high quality from a vintage that was unusually moderate and ideally suited to Chardonnay in most of South East Australia. Bouquet. Intense white peach & melon fruit with a background of nutty oak and buttery complexity. Palate. Intense peach melon fruit flavours with complex nutty oak and creamy characters. The texture is soft and silky and balanced by a fresh acid finish.

Encounters with unblended Australian Mourvedre are rare. The origins of Mourvedre are almost certainly Spanish where it is often called Monastrell. It is the principal black grape of the five appellations that cluster on Spain's Southeastern Mediterranean Coast. A very late variety in both bud break and ripening season, the Barossa Valley is one of the few areas in Australia that can successfully ripen Mourvedre. One of the original grapes grown in the Barossa Valley, Mourvedre thrives in the hot and dry conditions of a Barossa summer. Until the late 1960s, however, the main French plantings of Mourvedre were in Provence, where it is the dominant grape in Bandol. It is also used in the blends of Cotes du Rhone an Chateauneuf du Pape. The wine produced from Mourvedre's small, sweet, thick-skinned berries tend to be deeply coloured, rich in spice, high in alcohol and tannin, gamey when young and full of fruit.
